

This is one of our family's absolute favorite ways of dealing with our current overabundance of eggs. Having five well-laying chickens turns out to be more eggs than we perhaps bargained for.
Our family likes these pancakes. You can mix up the batter the night before and let it rise in the fridge until morning. Try to take it out early, though ... the batter should be room temp (or thereabouts) when you cook it, for best results.
