Best Ever Peanut Blossom Cookies

These are the best peanut blossoms I have ever eaten!

Now, it may have to do with using all-natural peanut butter, or it may be that this highly-touted recipe is, in fact, all that. Dunno. But do this and do it with all-natural peanut butter for cookies that you have to give away NOW (otherwise you'll eat them all).

Ingredients:

1/2 c sugar
1/2 c firmly packed brown sugar
1/2 c (1 stick) unsalted butter, softened
1/2 c all-natural peanut butter
1 large egg
1 tsp vanilla extract
1/4 tsp salt
1 3/4 c all-purpose flour
1 tsp baking soda

1/4 c sugar
40 Hershey's kisses

Time:

Prep: 25 min plus chill time
Bake: 8 min per batch, makes about 4 trays

Instructions:

Combine 1/2 c sugar, brown sugar, butter and peanut butter in stand mixer. Beat until light and fluffy - may take 5 min or more depending on the temperature of the butter & peanut butter.

Add egg, vanilla and salt; mix until well combined.

Add baking soda and flour; mix, scraping sides of bowl often, until very well combined. Dough will be soft and somewhat sticky.

Chill dough 30-60 min. Preheat oven to 375 degrees. Pour 1/4 c sugar onto a smooth surface (I use a pastry rolling sheet).

Shape dough into 1 inch balls. Roll in sugar, place 2" apart on ungreased cookie sheet. Press down very gently to create a flat bottom on the ball so they don't roll around when you put them in the oven. (Side note: I always use parchment paper - makes it easier to get this batch off the sheet and the next batch can be prepped on a new piece of parchment while you're waiting for the last batch to bake.)

Bake 8-10 min or until very lightly golden brown. While baking, start unwrapping chocolate kisses.

If you're using parchment, pull the parchment (with cookies on it) off the cookie sheet first. Immediately press 1 chocolate kiss in center of each cookie, then let cool on the paper. If you're not using parchment, press kisses into cookies while still on cookie sheet, then transfer to a cooling rack.

Cool completely. This means an hour or more, depending on the temperature of your kitchen. Seriously, don't try to stack them early. The kisses are still soft. Store in an airtight container.

Recipe is supposed to make 48, but I always get something between 30 & 40. Easy recipe to double.
